A controlled atmosphere is an agricultural storagemethod in which the concentrations of oxygen, carbon dioxide and nitrogen, as well as the temperature and humidity of a storage room are regulated. Both dry commodities and fresh fruit and vegetables can be stored in controlled atmospheres.
The ideal storage temperature is 30-32°F with 90 percent humidity. Apples are likely to suffer freeze damage if the temperature dips below 30°; and will ripen quickly, if the temperature rises above 40°, so do your best to match these conditions
From here apples may be placed into a refrigerated storage room until they are ready to be washed, packed and made ready for delivery. Apples stored in a commercial refrigerated storage will keep for 4 to 6 months, but for long term storage up to 12 months, growers use CA storage.
